It was simple reverse psychology...people kept voting for the fat bastard 'cause they felt sorry for him since Simon was being so mean to him 
So he did the exact opposite and just complimented him  to take the sympathy factor away...worked like a charm  'cause Scotty's now 
Either that or the producers took my advice and just kicked Scott off the show; to hell with the voting results
